Double-Dressed Arugula & Burrata Salad
For fans of the stuff, seeing Burrata on a restaurant menu is known to elicit shrieks of excitement and anticipation. With its fresh aroma and utterly creamy texture, this soft Italian cheese is the ideal counterpoint to other appetizer favorites like salty prosciutto and tangy bruschetta. And when said fans find the stuff in the cheese case at their neighborhood Trader Joe’s, for a fraction of the menu price? Let’s just say if you’re not yet a fan of Burrata, you soon will be!
Break open a ball of Trader Joe's Burrata, and you’ll be delighted to discover soft, stretchy curds comingling with rich cream in its center, greeting you with a slightly sweet, milky aroma. Creamy and almost cloud-like, it’s a cheese-lover’s dream, with only the simplest accompaniment needed to allow it to shine.
Looking for palatable partners? How about fresh cantaloupe slices and balsamic vinegar? Perhaps some heirloom tomatoes and arugula? Or maybe on pizza, with tangy tomato sauce, basil, a glug of extra virgin olive oil, and a few cracks of sea salt…
In a small bowl, mash garlic and salt together with the back of a spoon to form a paste. Set aside. In a separate bowl, whisk together lemon juice and olive oil. Slowly add the lemon juice and olive oil to the garlic paste and whisk until emulsified.
In a large, shallow serving bowl, toss arugula with lemon dressing. Arrange tomato wedges atop arugula. Remove cream-filled burrata balls from container, arrange atop arugula and gently break them open with your hands. Drizzle salad with balsamic glaze. Serve immediately.
